“cantuccini” are typical florentine biscuits, traditional desserts that you can find in any tuscan table with a glass of Vinsanto wine.
The ingredients are really simple but the double bake makes them crisp and durable several days.
This is the basic recipe, but I love replace almonds with other ingredients according with my mood … or with my pantry! Pistachios+ withe chocolate are my favorites, my daughter loves hazelnuts + dark chocolate, in any case, for me they are absolutely a perfect way to end the dinner with a glass of sweet wine or with a good espresso.
Cantuccini – Almond cookies
500 gr. flour – 400 gr. caster sugar – 250 gr. almonds – 3 eggs – 3 egg yolks – 50 gr. unsalted butter – one teaspoon baking powder – un little glass of vinsanto or other sweet wine – a pinch of salt.
Preheat the oven on 180°. Toast the almonds in the oven for 5 minutes. In a large bowl put the flour, the sugar, salt, 3 eggs and 2 yolks, the vinsanto, the baking powder, the melted butter, the almonds and salt.
Work the mixture with your hands until you will have a soft dough. Divide the dough in equal parts, form flattened thin loafs, 10 cm wide. Place them on a baking tray lined with paper, brush with the egg yolk and bake for 25 minute, until browned. Remove from the oven and set aside for few minute.
Slice when they are still hot into 2 cm slices and bake the cookies again until they are golden and crisp.
