I have always two or three bananas too ripe in the kitchen and this is the best way to turn them into a delicious treat perfect for your breakfast with a cup of coffee :-)))
Recipe from The Great British Book of Baking
250 gr. self raising flour – a good pinch of salt – 150 gr. caster sugar – 100 gr. unsalted butter, melted and cooled – 2 eggs, beaten – 250 gr. peeled ripe bananas (2 large) – 75 gr. dark chocolate, chopped
Preheat the ove to 180°
Mix the flour with the salt and the sugar in a mixing bowl. Add the melted butter and the eggs. Mash the bananas with a for and add to the other ingredients. Add the chocolate and mix well to combine the ingredients.
Transfer the mixture into a buttered tin and cook for 55 minutes, until the loaf is golden and brown.
Note: you can add also walnuts
