a delicious, fragrant brioche for your breakfast without knead … yes it’s possibile, you will need 5 minutes to combine the ingredients and a couple of day to forget your brioche in the fridge… and it really works!
250 gr. /8 ounces strong flour
100 gr. /3,5 ounces cold melted butter
2 eggs at room temperature
50 gr. /1,7 ounces honey
75 gr. / 2,6 ounces water
1 pinch of salt
10 gr./0,35 ounces fresh yeast.
Dissolve the yeast in the water.
In a large bowl mix the eggs, butter, honey and salt. Add the water with the yeast, then the flour. Mix just to combine the ingredients.
You will get a very soft dough. Cover the bowl with cling film foil and set aside at room temperature for two hours. After this time, store the bowl in the refrigerator for at least one day up to a maximum of five.
Divide the dough into three parts. Shape into a braid and place the dough in a buttered and floured mold.
Let the dough rise until it reaches the edges of the mold, brush the top with melted butter and bake at 170°/300 F for about 30-40 minutes.
The brioche keeps well for several days when stored in a plastic bag … ikea bags are ideal.
You can add a special twist to your brioche adding to the dough dried fruits, dark chocolate, lemon zest, orange zest etc..
